- 3 Golden Delicious apples
- 1 Tbsp lemon juice
- 2 eggs
- ¼ cup honey
- 1 tsp lemon zest
- 1 tsp vanilla
- ¼ cup grapeseed or vegetable oil
- ¼ cup unsweetened applesauce
- 1 ½ cups gluten-free all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 1 tsp cinnamon
- ⅛ tsp nutmeg
Instructions
- Preheat the oven to 350°F and grease an 8×8 baking dish.
- Peel, core and thinly slice the apples. Toss with lemon juice and spread evenly into the baking dish.
- In a large mixing bowl, whisk together two eggs. Add honey, lemon zest, vanilla, oil and applesauce, whisking to combine.
- Add flour, baking powder, salt, cinnamon and nutmeg, stirring until all ingredients are incorporated. Pour batter evenly over apples.
- Bake at 350°F for 25-30 minutes until the edges are browned and the top is firm.
