Piña Colada Passover Granola

A sunshine breakfast made from real ingredients.

Ingredients

  • 3 cups gluten-free farfel
  • 1 cup unsweetened coconut flakes
  • ½ cup chopped dried pineapple
  • ¼ cup safflower oil
  • 2 Tbsp dark brown sugar
  • 2 Tbsp maple syrup

Instructions

  1. Preheat oven to 275°F. Line a large baking sheet with parchment paper.
  2. Combine farfel, coconut and dried pineapple in a large bowl and mix well.
  3. In a separate bowl whisk together oil, brown sugar and maple syrup. Pour over farfel mixture and mix well until well coated. Transfer to the lined baking sheet.
  4. Bake at 275°F for 30 minutes, stirring half way through baking to prevent it from burning.
  5. Let it cool completely and store in an airtight container.
