Za’atar Roasted Potatoes

A sprinkle of za’atar is all it takes to elevate your roasties.

Ingredients

Units
  • 1 ½ lb Yukon Gold or red potatoes
  • 23 Tbsp olive oil
  • 1 tsp salt
  • 2 Tbsp za’atar
  • 1 tsp lemon zest

Instructions

  1. Preheat oven to 400°F.
  2. Cut potatoes into quarters or 1/2-inch round slices.
  3. Toss potatoes with olive oil, salt and za’atar. Roast in the oven for 35-45 minutes, to the your desired level of crispness.
  4. Sprinkle lemon zest on top before serving.
