- 1 ½ lb Yukon Gold or red potatoes
- 2–3 Tbsp olive oil
- 1 tsp salt
- 2 Tbsp za’atar
- 1 tsp lemon zest
Instructions
- Preheat oven to 400°F.
- Cut potatoes into quarters or 1/2-inch round slices.
- Toss potatoes with olive oil, salt and za’atar. Roast in the oven for 35-45 minutes, to the your desired level of crispness.
- Sprinkle lemon zest on top before serving.
