Zwika Pres, co-owner of the Israeli restaurant, Nanoosh, died suddenly last week. Nanoosh, a favorite neighborhood spot in NYC, has been serving healthy, organic hummus, tabbouleh and healthy Mediterranean-inspired salads for the past 10 years with locations all over Manhattan. It also has a Berlin location.

Pres, who was only 49, grew up on Kibbutz Dorot in Israel, and had a passion for authentic Israeli food and Mediterranean flavors. He entered the hummus game just 10 years ago, having begun his career in diamonds. Last year, he told The Jewish Week, that he never imagined opening a hummus place — “Not in a million years.” The unexpected business opened in 2007 when Pres and his friends and co-founders David Kostman and Hugo Trinquier, saw a business opportunity in the rising popularity of hummus and healthy, organic food. Over the next decade, they developed a healthy, fast-casual Mediterranean-inspired menu, and ran successful restaurants that they hoped would one day become a nationally known franchise.

You’ll be missed, Zwika Pres, and your memory will live in your delicious food.
