Mini Apple Kugels with a High-Protein Twist

- Total Time: 25 minutes
Ingredients
- 2 apples, chopped
- 2 scoops Qualify unflavored protein powder
- ¾ cup sugar
- ½ cup flour
- 1 tsp cinnamon
- ½ tsp baking powder
- 3 eggs
- ½ cup olive/avocado/coconut oil
- 1 Tbsp lemon juice
- 1 tsp vanilla extract
For the glaze (optional):
- powdered sugar and water
Instructions
- In a bowl, mix all the dry ingredients together: protein powder, sugar, flour, cinnamon and baking powder.
- Mix in 3 eggs, oil and lemon juice.
- Chop your apples. Once your batter is mixed together, mix in the chopped apples.
- Scoop the batter into muffin tins.
- Bake at 425°F for 12-15 minutes.
- Let it cool and (optional) drizzle an icing glaze made with powdered sugar and water.
